Upgrading to wheezy

For the grub part if 'dd if=/dev/sda bs=512 count=1 2>/dev/null | xxd | grep GRUB' produces a line that contains GRUB you will want to install to /dev/sda.
If it does not produce a line try each device listed by 'ls -la /dev | grep 'hd[a-f]$\|sd[a-f]$'', then each partition (sda1,sdb2,etc.)

Is there a guide for upgrading to Debian wheezy?

It appears the OVH shipped version of Debian is heavily modified and I'm not sure what I need to preserve when upgrading.

For example the upgrade is asking me where to install grub.
